Domaine Patrick Javillier is a wine producer of the Côte de Beaune region of Burgundy. It produces wine from fourteen appellations ranging between Puligny-Montrachet and Pernand-Vergelesses.
Patrick Javillier took control of the family domaine in 1974 and began to expand the vineyards, acquiring sites in Meursault (Village and Premier Cru), Puligny-Montrachet, Pommard and Corton-Charlemagne in the 1980s and 1990s. At the same time, he began to manage several additional parcels owned by his wife, including Les Grands Liards, Les Montchenevoy and Premier Cru Aux Serpentières in Savigny-les-Beaune, as well as vineyard sites in Aloxe-Corton and Pernand-Vergelesses.
The majority of these vineyards are planted to Chardonnay, although there are some Pinot Noir vines as well. Each parcel is vinified separately in order to retain the unique characteristics particular to each terroir. After harvest, the Chardonnay grapes are pressed and then fermented in oak barrels, with the level of new oak varying according to the parcel and vintage.
